tacos de pescado

I googled how to say fish tacos in Spanish.

-canola or peanut oil
-1 c unbleached all-purpose flour
-1 c beer (your favorite ale or lager will work just fine)
-1 tsp Old Bay seasoning
-1/2 tsp cayenne pepper
-1/2 tsp pepper
-pinch of sea salt
-1 1/2 pounds tilapia (any good quality white fish will work)
-white corn tortillas
-optional: lime wedges + queso fresco + salsa + sriracha

-pour 2.5 inches of oil into large pot or to fill a deep fryer and heat oil anywhere from 350-375 degrees (candy thermometer is helpful here)
-combine flour, beer, and spices together in mixing bowl
-dredge fish in batter and dump in oil 
-fry 4 minutes until a deep golden brown (make sure to turn over halfway through)
-remove fish, put on paper-towl lined platter and sprinkle with salt while still hot
-repeat until desired amount is cooked
-serve with lime wedges, quest fresco, salsa, and/or zesty slaw (sliced cabbage, poppyseed dressing to taste, pinch of salt, squeeze of fresh lime juice)
